For the Love of Bacon: A Journey of Self-Discovery

I went nearly 33 years without ever tasting bacon. Reflecting on it now, it seems like a culinary crime. How ridiculous is that? In my family, bacon was simply off the menu. It wasn’t due to any religious restrictions—there was no kosher kitchen happening in our home—it just wasn’t part of our meals.

For years, I opted for toast or fruit instead of bacon with my eggs, claiming, “I’m just not into breakfast meats.” When ordering a Cobb salad, I would request extra avocado, and I’d cringe when people asked for bacon on their sandwiches or burgers. What’s the fuss about this greasy pig meat? Definitely not for me.

Then, last week, my friend Sarah came to visit. She loves to treat us when she’s around and whipped up a brunch featuring Red Pepper Frittata and Brown Sugar-Chili Bacon. I told her I’d stick with the frittata, but she looked at me as if I had just suggested I don’t like rainbows. “Have you even tried bacon?” she pressed. “It’s practically impossible not to like it!”

As the bacon sizzled that June morning, an enticing sweet and salty aroma filled the air, and I found myself drooling. With a napkin in hand, I cautiously took a bite. It was incredible. I could hardly believe how good it was. Before I knew it, my plate was empty, each crunchy morsel savored like it was the last bite on Earth.

Since that fateful brunch, bacon has invaded my thoughts. Morning, noon, and night, ideas of bacon-stuffed dishes swirl around in my head—think warm bacon dressing drizzled over greens, bacon and spinach quiche, or even bacon-wrapped dates. How could I have lived without this deliciousness for so long? The time I spent bacon-free now feels like a culinary drought, and I’m ready to make up for lost time, one crispy bite at a time.
