Chocolate and peanut butter rank as the ultimate indulgence in my book. When I crave something sweet, peanut butter cups are my go-to. Ice cream? I always opt for a flavor that combines chocolate and peanut butter. And here’s a tip: when you visit your favorite ice cream shop, adding peanut butter sauce to your chocolate treat elevates the experience to a whole new level!
I also love the simple pleasure of dipping candy in peanut butter. And if you ever have the urge to dunk a chocolate chip cookie into a jar of nut butter, do it! It’s a game changer.
Peanut butter and jelly sandwiches are another obsession of mine. And when I say I like peanut butter, I mean I slather it on thick. I want my sandwich to weigh at least two pounds when I’m done spreading! I love when the filling oozes out from the crust, creating a delightful blend of fruity and nutty flavors with every bite.
I once had a grilled PB&J from a café that was made just like a grilled cheese sandwich, cooked in butter until golden brown. It was filled with creamy peanut butter and warm jam, and it rocked my world.
Speaking of jams, I enjoy all kinds, from cherry preserves to fruit spreads, and I have no qualms about eating it straight from the jar!
Recently, I realized it had been too long since I made my own peanut butter cups. I used to whip them up when my kids were younger; it was a fun activity for us, plus, homemade versions can be much larger than the store-bought ones.
So, I gathered my ingredients at the grocery store, including some raspberry jelly my daughter requested (we are in the toast phase of quarantine). As I loaded my cart, it hit me: chocolate and fruit are delicious together. Peanut butter and fruit are fantastic too. So why not combine the three?
I rushed home to create these treats, and let me tell you — they exceeded my expectations! After the chocolate hardened, I took a bite, and the texture was heavenly. While my son prefers to freeze his, I enjoy mine at room temperature. Sure, they can get a bit messy, but I’m always looking for an excuse to eat something over the kitchen sink anyway.
Recipe for No-Bake Peanut Butter and Jelly Cups
These no-bake peanut butter and jelly cups are simple to make and require just a few ingredients. Here’s what you’ll need to create six cups:
- 1 bag (12 oz) of chocolate chips (I used milk chocolate, but dark chocolate could work even better since the jelly adds sweetness. Why not try both?).
- 1 jar of your favorite jelly (pretty much any fruit-based jelly or preserve will do!).
- Your choice of peanut butter (or any nut/seed butter).
- Cupcake liners.
Instructions:
- Melt the chocolate chips in a bowl in the microwave, stirring every 20 seconds until smooth.
- Line a muffin tin with cupcake liners and spread a generous layer of melted chocolate in each, bringing it halfway up the sides to form a “bowl.”
- Freeze for a few minutes to set.
- Add a tablespoon of peanut butter and jelly, spreading it evenly with the back of a spoon.
- Top with the remaining chocolate, spreading it to cover the entire cup.
You really should give these a try. Or not; it’s your choice! But skipping out on this experience may mean missing out on something truly delicious.
