I woke up today yearning for the weekend, but alas, it’s only Wednesday. With a mountain of work ahead, it feels like an eternity until I can kick back and relax. Not one to complain, especially since I enjoy my job, I decided to treat myself and my family to something a little special for dinner—weekend-worthy fare. French toast has always held a special place in my heart since childhood. When the breakfast cravings hit, nothing quite satisfies like a warm plate of French toast.

However, I couldn’t just settle for the ordinary this time. Instead, I created these delightful French toast cups filled with fresh berries. The beauty of these individual servings is that everyone gets their preferred berry without having to compromise. In my home, preferences run deep—I’m a fan of blackberries, while my youngest prefers strawberries, and the older kids are on team raspberry. Berry French Toast Cups

Servings: 12

Ingredients:

  • 16 large eggs, lightly beaten
  • 1 loaf of day-old bread (I used Italian), cubed
  • 1 stick of melted butter
  • 1 cup light cream
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 1 cup fresh berries (your choice!)

Instructions:

  1. Preheat your oven to 350ºF. Line a muffin pan with liners or simply grease the muffin tin.
  2. In a large bowl, mix together the eggs, cream, butter, brown sugar, and vanilla until well combined.
  3. Pour this egg mixture over the bread cubes and gently toss to coat.
  4. Fill each muffin well halfway with the mixture and place berries in the center.
  5. Top with more bread cubes until the muffin well is full, then add a few more berries on top.
  6. Bake for 40 minutes, or until golden brown and the egg is set.
