With Hanukkah upon us, it’s time to embrace the festive spirit, even if the early arrival has caught me off guard. I mean, we just wrapped up Thanksgiving! The kids are buzzing with excitement over gifts, and I can only imagine the chaos that will ensue after eight nights of festivities. Oh, and let’s not forget, Evan’s birthday is right around the corner. What a time to be alive!
In the spirit of the Festival of Lights, I’d like to share a delightful recipe that’s sure to impress at any gathering. Trust me, it’s way easier than figuring out how to wrap a gift (which I’m notoriously bad at).
Now, for those unfamiliar with Jewish cuisine, there are some dishes best left untasted—like gefilte fish and chopped liver. However, matzo ball soup, potato latkes, and freshly baked challah are culinary treasures that everyone should experience. If they’re not already on your radar, make it a point to add them to your list!
Kugel is a classic dish that often confuses those unfamiliar with it. Many Jewish friends rave about my kugel recipe, while non-Jews sometimes raise an eyebrow at this sweet noodle dish that defies categorization as either a dessert or a side. But I have a feeling you’re going to love it!
Here’s my favorite kugel recipe that you simply must try:
Ingredients:
- 1 package egg noodles, cooked and drained
- 1 pint Greek yogurt or sour cream
- 1 stick melted butter
- ½ lb cottage cheese
- 6 eggs
- 1 cup sugar
- ½ cup brown sugar
- 2 teaspoons vanilla extract
- 1 cup dried cranberries
- Graham cracker crumbs for topping
Instructions:
- Preheat your oven to 350 degrees.
- In a large mixing bowl, combine all ingredients except for the graham cracker crumbs.
- Pour the mixture into a greased 9 x 13 inch baking pan.
- Top it off with a sprinkle of graham cracker crumbs.
- Bake for about an hour, until it’s bubbly and golden brown on top.
