One of my favorite culinary discoveries during my time in Savannah is the delightful treat known as banana pudding.

  1. In a large bowl, prepare the instant pudding according to the instructions for pie filling. Once it has set, gently fold in the whipped topping and refrigerate.
  2. Slice the bananas into 1/2-inch thick rounds.
  3. Layer the vanilla wafers at the bottom of a 2-quart casserole dish, followed by a layer of banana slices. Spread a 1/2-inch layer of the pudding mixture on top. Repeat these three layers until you exhaust the ingredients or reach the top of the dish, ensuring the final layer is pudding.
  4. For an elegant touch, consider creating mini banana pudding servings in ramekins.
  5. Refrigerate for at least 4 hours, but overnight is ideal. The longer it sits, the more the flavors blend, and the wafers become tender, resembling soft vanilla cakes!
