Baking with lemon and other citrus fruits is a delightful experience. The zesty, sweet-tart flavor invigorates the palate and evokes memories of sunny summer afternoons. This lemon olive oil cake is light, fluffy, and incredibly refreshing. While the ingredient list may seem extensive, you likely have many of these items in your kitchen already. Rest assured, the process is simpler than it appears!
Ingredients:
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3 eggs, at room temperature
- 1-1/2 cups granulated sugar
- 2/3 cup extra virgin olive oil
- 2 tsp. lemon zest (feel free to experiment with other citrus, such as grapefruit or orange)
- 1 tsp. pure vanilla extract
- 4 tbsp. lemon juice
- 1/2 cup buttermilk Note: You can easily make your own buttermilk—see the instructions below!
Directions:
- Preheat your oven to 350 degrees Fahrenheit. Grease a 9-inch springform pan (an 8×8 baking dish works too!).
- In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl (or a stand mixer if preferred), beat the eggs and sugar on high speed until the mixture becomes fluffy and pale, about 5 minutes.
- Reduce the mixer speed to medium and gradually incorporate the olive oil and lemon zest.
- Decrease the speed to low, add half of the flour mixture, then mix in the vanilla, lemon juice, and buttermilk. Finally, add the remaining flour and mix until just combined.
- Pour the batter into the prepared pan. Bake for approximately 1 hour and 15 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Allow it to cool for 20 minutes before removing from the pan.
- Serve with whipped cream and fresh berries for an extra touch!
Making your own buttermilk is simple: For every cup of milk, add one tablespoon of vinegar or lemon juice. Let this mixture stand for 5 minutes, and you’ll have homemade buttermilk! For this recipe, you will need 1/2 cup of milk and 1/2 tablespoon of vinegar or lemon juice.
