The Ultimate Ice Cream Cake Recipe

So, it’s Evan’s birthday, and let me tell you, I did not give him the green light to turn five. But since my little one had his heart set on an ice cream cake, I couldn’t resist making it happen.

My partner, Jake, often reminisces about a dessert from his childhood called “Yodel Pie.” As with most family recipes, it was a simple affair: Yodels, ice cream, and hot fudge. While it sounded delicious, I knew I could elevate it. Instead of using store-bought hot fudge, I whipped up a homemade version. I also happened to have some vanilla ice cream and a stash of Oreos, so I crushed those up and combined them with way more Oreos than you’d find in any commercial ice cream. And let me tell you, it was a total indulgence!

I wish you could taste it, because it’s absolutely divine. If you’re up for the challenge, here’s what you’ll need:

  • Two boxes of Yodels (or any snack cakes you prefer), each sliced into six pieces
  • Two gallons of your favorite ice cream, softened
  • Hot fudge (while you can use jars, homemade really takes it to the next level. It only takes five minutes to make!)

Homemade Hot Fudge Recipe:

  1. In a pot, simmer 1 container of sweetened condensed milk, 1 bag of semi-sweet chocolate chips, 1 unsweetened square of baking chocolate, and 1 tablespoon of butter until everything is melted together.
  2. Stir in 1 tablespoon of vanilla, and voilà!

Now, for the fun part: layering. Start with the Yodels, then add a layer of ice cream, followed by a drizzle of hot fudge. Repeat the layers until you fill the bowl, then sprinkle any chocolate flakes from the Yodels on top. Pop it in the freezer for a few hours to set.

The kids devoured it—plates were licked clean, and that includes Jake! They’ve already requested this cake for every birthday this year, which works for me since it’s practically foolproof.

Happy birthday to my sweet little guy!
