  1. Preheat your oven to 400°F. Fit the refrigerated pie crust into a deep 9-inch pie pan.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the leeks and mushrooms until they soften and turn golden brown, about 12 minutes. Transfer to a bowl.
  3. In a medium bowl, whisk together the eggs, milk, and cream, seasoning with salt and pepper.
  4. Evenly distribute the leek and mushroom mixture across the bottom of the pie crust. Sprinkle the crumbled goat cheese over the vegetables, and then pour the cream mixture on top.
  5. Bake for 45 to 50 minutes, or until the center is just slightly jiggly and the top is golden brown. A knife inserted into the center should come out mostly clean. Allow the quiche to cool in the pan on a wire rack. Serve it warm or at room temperature.
