Growing up, quiches were a regular staple on our dinner table, but they’ve become a bit of a relic of the past—probably due to their peak popularity back in the ‘80s. You know how it goes; when something is super trendy, it eventually loses its shine. Plus, there’s a lingering notion that quiches are loaded with too much fat (not entirely wrong, but let’s not throw the baby out with the bathwater!). Quiches can be delightful, especially when you whip up a lighter version filled with veggies. So, who’s ready to revive the quiche? Pair it with a fresh salad, and you’re all set!
Leek, Mushroom, and Goat Cheese Quiche

Ingredients:
- 1 store-bought pie crust
- 2 tablespoons olive oil
- 2 leeks, thinly sliced and rinsed
- 1 pound of mushrooms, thinly sliced (button or any other type works great)
- 4 large eggs
- ½ cup whole milk
- ½ cup heavy cream
- Coarse or kosher salt and freshly ground pepper, to taste
- 3 ounces fresh goat cheese, crumbled
Instructions:
- Preheat your oven to 400°F. Fit the pie crust into a 9-inch deep dish pie pan.
- In a large skillet over medium heat, add 1 tablespoon of olive oil. Toss in the leeks and mushrooms, cooking until soft and golden brown—about 12 minutes. Transfer them to a bowl.
- In a separate medium bowl, whisk together the eggs, milk, and cream. Season generously with salt and pepper.
- Spread the leek and mushroom mixture evenly over the bottom of the pie crust. Crumble the goat cheese on top, then pour the egg mixture over everything.
- Bake for 45 to 50 minutes until the center is just slightly jiggly and the top is golden and puffed. A knife inserted in the middle should come out mostly clean. Let the quiche cool in the pan on a wire rack and serve warm or at room temperature.
