Ever splurged on an ice cream cake? Let me tell you, they can be shockingly pricey! Just the other day, I forked out $16 for a small cake that had a sprinkle of Oreo crumbs on top. I thought, “This better be heavenly.” Spoiler alert: it was anything but. This big-name brand cake was a bland slab of ice cream with no crust and whipped cream that tasted like it had been under a heat lamp for a decade. Yikes!
So, I rolled up my sleeves and decided to create my own ice cream cake. How difficult could it be? I was convinced I could craft something that not only looked better but also tasted a thousand times nicer—all for less than what I spent! Spoiler alert: I was right.
I kicked off my cake-making journey with an Oreo crust. I fondly remembered when Oreo sold ready-made cookie crumbs, but alas, they were nowhere to be found. So, I took on the task of scraping the filling out of each Oreo—definitely not a good idea when you’re hungry! (Let’s just say a few more cookies mysteriously disappeared into my mouth!)
After whipping up my Oreo crust, I softened some vanilla and strawberry ice cream. Once it was spreadable, I smoothed it into my crust. Easy peasy! But what’s an ice cream cake without a little crunch? I sprinkled a layer of Oreo cookie crumbs between the ice cream layers for that delightful texture.
And let’s talk about toppings! Forget the whipped cream; we can do better. How about crushed waffle cone pieces drizzled with chocolate ganache? Yes, please! To take it one step further, I decided to top the cake with actual ice cream cones. The beauty of making your own cake is that you can let your creativity run wild!
To ensure the cones were stable, I snapped off the bottoms so they could anchor into the cake. Then, I piled the chocolate-coated cone pieces around the cones that were already placed in the cake. It was starting to look fabulous! I popped it in the freezer to firm up overnight.
Just before serving, I scooped some ice cream into the cones and topped them with whipped cream, sprinkles, and a cherry. How much did I spend in total? Just over $14! Not only did I save money compared to that store-bought disaster, but my creation looked and tasted a million times better. Plus, the “oohs” and “aahs” from my family were priceless.
