Simple Banana Pudding Delight

If you haven’t yet explored Savannah, Georgia, it’s time to add it to your travel wish list! I spent two wonderful years there post-college and would jump at the chance to go back. The food is incredible, the historical architecture is rich, and the locals are as warm as the Southern sun. Speaking of food, one of my greatest culinary discoveries during my time in Savannah was banana pudding.

Oh, you’ve heard of it? Well, who hasn’t? Once you try it, it’s hard to forget. The combination of creamy pudding, ripe bananas, vanilla wafers, and whipped cream is pure bliss. Banana pudding is like a warm hug in dessert form!

I’ve previously made banana pudding from scratch, even whipping the cream by hand, but a couple of years ago, I decided to throw together a simpler version. Guess what? People seem to love it even more! No joke.

The Lazy Cook’s Banana Pudding Recipe

Ingredients:

  • 2 packages (1 oz each) instant vanilla pudding
  • 2 overripe bananas
  • 1 container of thawed whipped topping
  • 1 package of vanilla wafers

Instructions:

  1. In a large bowl, prepare the instant pudding according to the package directions for pie filling. Once it has set, gently fold in the whipped topping and pop it in the fridge.
  2. Slice the bananas into about ½ inch thick rounds.
  3. In a 2-quart casserole dish, layer the vanilla wafers at the bottom, followed by a layer of bananas and then spread a ½ inch layer of the pudding mixture on top. Repeat these layers until you run out of ingredients or reach the top of the dish—just make sure the final layer is pudding.
  4. Want to get fancy? Try making mini banana pudding cups in ramekins for individual servings!

Let it chill in the refrigerator for at least 4 hours, but overnight is even better. The longer it sits, the happier you’ll be—the flavors meld, and the wafers turn into soft little vanilla cakes!

Tip: This recipe is super easy to adapt for those looking for a diabetic-friendly dessert! Just swap out for sugar-free pudding and whipped topping, and use sugar-free vanilla wafers. If sugar-free vanilla wafers are hard to find (they can be!), Murray sugar-free shortbread cookies work like a charm too.
