Summer is all about enjoying the simple pleasures: juicy watermelon, sizzling hot dogs, and comforting potato salad that adorn our picnic tables. Yet, nothing embodies the essence of summer quite like s’mores. The mere mention of them conjures up nostalgic memories—sticky fingers, slightly charred sticks, glowing embers, twinkling stars, fireflies dancing in the night, and satisfied bellies.

Throughout the years, I’ve encountered numerous recipes that aim to encapsulate the deliciousness of s’mores in a bar or cookie format. Unfortunately, many of these recipes didn’t live up to my expectations. What I truly sought was that gooey texture of a perfectly toasted marshmallow, the crunch of graham crackers, and the rich, melty goodness of chocolate in every bite. So, I decided to create my own version.

When it comes to chocolate, my heart is loyal to Hershey’s. While I occasionally enjoy gourmet chocolates, nothing compares to the classic taste of Hershey’s in a s’more. It’s simply essential.

This S’more Bars recipe incorporates eight full-sized bars of chocolate and a whopping ten ounces of coarsely broken graham crackers. I intentionally left the graham crackers in larger pieces to give each bite a satisfying mix of textures, just like a traditional s’more. And of course, marshmallows are a must. While I dream of making my marshmallows from scratch, the reality is that with four kids, I’m all about simplicity. That’s why I adore this bar recipe—no fuss involved!

When you pull these bars from the oven, the aroma of chocolate and sugar will be irresistible. My home fills with this delightful scent, leaving my kids anxiously awaiting their first taste. However, patience is key; these bars are incredibly gooey when fresh out of the oven. For the best results, let them set in the fridge for about two hours. But, if you can’t wait, feel free to scoop a portion into a bowl and add a scoop of ice cream on top—I won’t tell!

S’more Bars Recipe:

Ingredients:

  • 3 cups flour
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 2 sticks of softened butter
  • 2 cups packed brown sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 10 ounces graham crackers, broken into large pieces
  • 1 bag (10 ounces) of marshmallows
  • 8 Hershey bars, broken into small pieces

Instructions:

  1. Preheat your oven to 350°F and grease a 9×13 baking dish.
  2. In a large mixing bowl, combine flour, baking soda, and salt. Set aside.
  3. Using a stand mixer or handheld mixer, cream together the softened butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing on low to medium speed until just combined.
  5. Stir in the vanilla and mix for another minute.
  6. Gradually add the flour mixture, mixing until just incorporated.
  7. Gently fold in the graham crackers, marshmallows, and chocolate pieces by hand.
  8. Press the mixture into the prepared baking dish and bake for 30 minutes or until golden brown. To check for doneness, insert a toothpick into the batter (avoid marshmallows and chocolate to get an accurate reading).
  9. Allow the bars to cool in the fridge before serving. Store any leftovers in the refrigerator.
