Chocolate Caramel Matzo Delight

I don’t usually share recipes that aren’t my own, but as a proud member of the Jewish community, I feel it’s my mission to spread the word about this chocolatey, caramelly treasure. I mean, I went 32 years without discovering it, and I cannot let any of you endure such a culinary tragedy. My friend Rachel, who isn’t Jewish but definitely deserves an honorary title for her generosity, introduced me to this gem. Yes, I have that power!
This delightful recipe hails from the talented David Lebovitz, and I’ve made it a little more approachable because, let’s be honest, who likes dealing with parchment paper? Plus, he assures me it works just as well with saltines, and I believe him!
Ingredients
- 6 sheets of unsalted matzoh
- 1 cup unsalted butter, cut into pieces
- 1 cup firmly packed light brown sugar
- 1 teaspoon coarse sea salt
- 1/2 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup toasted sliced almonds
Instructions
- Line a rimmed baking tray with tin foil, because who has time for mess?
- Preheat your oven to 375°F (190°C).
- Place the matzoh on the baking sheet, breaking pieces if necessary to fill any gaps.
- In a small saucepan, melt the butter and brown sugar over medium heat, stirring until the butter is fully melted and the mixture starts to boil.
- Allow it to boil for 3 minutes while stirring constantly.
- Remove from heat and stir in the vanilla and half of the sea salt.
- Pour this mixture over the matzoh, using a heatproof spatula to spread it evenly.
- Bake in the preheated oven for 15 minutes.
- Take it out and immediately sprinkle chocolate chips on top. Let it sit for 5 minutes, then spread the melted chocolate over the matzoh.
- Top with toasted almonds and/or the remaining sea salt.
And voila! I like to pop mine in the freezer to set, then break it into pieces and indulge. Don’t judge me; it was a transcendent experience.
